The Winery
For over 25 years, Vincent Girardin has managed to create one of the most dynamic, young, and successful state-of-the-art cellars in Burgundy. Vincent currently has 20 hectares of vineyards and established contracts to buy grapes from top-quality vineyards, where he can control production, strictly reduce yields, and hand-pick all the grapes. Many vineyards from which he buys grapes are also biodynamic or organic. White wines now make up 90 of production. Each vintage follows the same procedure of rigorously sorting and gently pressing the grapes. The wines are barrel fermented (10-35 new oak) with wild yeasts for 14-20 months.
