The Winery

The ancient limestone quarries near the village of Bailly, just outside Auxerre, were first carved in the 12th century to supply stone for some of France's greatest buildings, including Chartres Cathedral. By 1972, they had become something else entirely: a natural cellar with constant temperature and humidity, perfectly suited to the slow ageing of traditional-method sparkling wine. Caves de Marsigny produces its Crémant de Bourgogne here, from Pinot Noir and Chardonnay, in conditions that cannot be engineered - only inherited.
