The Winery

Nautilus Estate’s innovative viticultural and winemaking team blends several different fruit parcels to achieve layers of complexity in the wines, focusing on their texture and mouthfeel. The estate is unusual in effectively having two wineries side by side: the first was built in 2000 and is dedicated to Pinot Noir; the second was built in 2006 for white winemaking. These facilities allow Nautilus to control the winemaking process precisely and have improved the environmental footprint of the winery by reducing energy requirements and waste. Locally designed and built hydraulic tipping drainers are used to manage skin contact time, and a pneumatic press allows for whole-bunch pressing of some varieties. All grape marc is composted on-site, creating up to 300 cubic metres of valuable vineyard mulch to return to the vineyards each year.
