One of my favourite examples of Châteauneuf-du-Pape. There is a complex aroma of plums, blackcurrants, and a hint of smoke. Ripe black cherry, hints of leather, liquorice and toasted oak on the palate, with a delightfully lingering finish. Perfect for lamb, cassoulet and food from the barbecue.

The Winery

Roger Sabon is a family domaine in Châteauneuf-du-Pape. Since 2004, winemaking has been in the hands of Didier Négron, whose wife is a Sabon. Robert Parker has been a regular customer for over 20 years, a telling endorsement! The vines, with a minimum age of 50 years, are planted on some of the finest sites in the appellation, with Grenache, Syrah, Cinsault and Mourvèdre making up the principal varieties. Fermentation takes place in stainless steel and small cement vats. Pumping over and cuvaison last 20 days at temperatures between 30 and 34 degrees, after which the red wines are matured in large foudres (large wooden vats) and barrels for around two years.
