One of my favourite examples of Châteauneuf-du-Pape. There is a complex aroma of plums, blackcurrants, and a hint of smoke. Ripe black cherry, hints of leather, liquorice and toasted oak on the palate, with a delightfully lingering finish. Perfect for lamb, cassoulet and food from the barbecue.

The Winery

Since 2004, winemaking has been in the hands of the talented Didier Négron (whose wife is a Sabon). Robert Parker has been a regular customer for over 20 years. The vines are planted in some of the best sites of Châteauneuf and have a minimum age of 50 years. The dominant grapes are Grenache, Shiraz (Syrah), Cinsault and Mourvèdre. The fermentation occurs in small cement vats and stainless steel vats; pumping over and cuvaison lasts for 20 days at a temperature between 30-34 degrees. The red Châteauneuf-du-Pape are then matured in foudres (large wooden vats) and barrels for around two years.
