8-Year-Old Cognac Cask-Finished Single Malt Scotch Whisky [70cl]

Wolfburn sits in Thurso, at the northern tip of the Scottish mainland. It takes its name from the Wolf Burn, the stream that fed the original distillery throughout the 19th century, before production ended in the 1860s. The site lay abandoned for over a century until a small team came looking in 2011 and found little left standing, though the burn still ran as it always had. A new distillery was built downstream, and the first spirit came off the stills on Burns Night, 25 January 2013. Every stage, from milling to bottling, is done here by hand by a small team, many of them Caithness born and bred, using soft local water, long fermentation and copper pot stills, before the spirit matures in cool warehouses close to the sea.


Matured in first-fill bourbon casks and finished for six months in first-fill Cognac casks of French Limousin oak, this limited edition of 3,900 bottles is non-chill-filtered and bottled at natural colour.
