Bright aromas of honeysuckle, and very refreshing citrus fruit flavours with a distinct minerality. Notes of buttered toast on the finish. Delicious texture and length. Has to be one of my favourite Premier Cru Chablis. Great pairing with creamy dishes and hard cheeses.

The Winery

Bernard Defaix is the fourth generation of a vine-growing family that began with 2 hectares in Chablis in 1959. The domaine now covers 27 hectares across Chablis Premier Cru (including Côte de Lechet, Vaillons and Lys), as well as Chablis and Petit Chablis. Bernard’s two sons now run the estate: Sylvain oversees vinification, ageing and bottling; Didier manages the vineyard, while his wife, Hélène, looks after the administrative and commercial side. The soils are worked solely by ploughing, and sulphur and copper are the only treatments used. The family is gradually moving towards full organic and biodynamic farming.
