Bright aromas of honeysuckle, and very refreshing citrus fruit flavours with a distinct minerality. Notes of buttered toast on the finish. Delicious texture and length. Has to be one of my favourite Premier Cru Chablis. Great pairing with creamy dishes and hard cheeses.

The Winery

Bernard Defaix started with a 2-hectare vineyard in 1959. The domain now stretches over 27 hectares in Chablis Premier Cru, Chablis and Petit Chablis, and many years ago adopted a sustainable and organic approach to their winemaking. Les Vaillons is a blend of old and young vines. The young vines are a selection of the best clones of Chardonnay. The wine stays on its fine lees for 8-12 months, depending on the vintage's character, giving the final wine more depth.
