Drew's Tasting Note

A minerally fresh honeysuckle nose. It is a refreshing citrus fruit with a mineral backbone on the palate. Toasted buttery notes on the finish. Great texture and length. Has to be one of the best premier cru Chablis I have tasted recently. Delicious. Great for any creamy dishes and hard cheeses.

The Winery

Bernard Defaix started with a 2-hectare vineyard in 1959. The domain now stretches over 27 hectares in Chablis Premier Cru, Chablis and Petit Chablis, and many years ago adopted a sustainable and organic approach to their winemaking. Les Vaillons is a blend of old and young vines. The young vines are a selection of the best clones of Chardonnay. The wine stays on its fine lees for 8-12 months, depending on the vintage's character, giving the final wine more depth.
