Few wines pair perfectly with ice cream than Pedro Ximénez. This is a sumptuous example of rich dried fruit: raisins, figs, and dates are notable on the nose and velvety smooth on the palate, combined with hints of honey. A lengthy, brilliant, crisp, flavourful finish.

The Winery

González Byass has its roots in 1835, when Manuel María González began as a wine trader in Jerez before turning to production with his uncle, José Ángel. Twenty years later, the company's agent in England, Robert Blake Byass, helped introduce their Fino Sherry to the British market, a venture so successful that it led to the formation of the González Byass partnership. Now run by the fifth generation of the González family, the business has expanded well beyond Jerez, with wineries producing wine and spirits across Spain, Chile and Mexico. The Sherries are aged in the traditional Solera system and blended in American oak casks.
