The Winery

The Niepce family have been growing vines in Rully since the 16th century, and it was from her great-aunt Henriette Niepce that Hélène Jaeger-Defaix began acquiring the first plots of what would become Domaine Jaeger-Defaix in 2002. The family connection to the appellation runs deep; Hélène's great-grandfather, Henri Niepce, was among those who helped Rully achieve its AOC status in the 1930s. Today, the domaine covers six hectares, of which 4.5 are planted across five premier cru plots in Rully. Hélène, an agronomist and oenologist, moved the estate to organic farming in 2009, relying exclusively on ploughing to manage the soils. Her husband, Didier Defaix, winemaker at Domaine Bernard Defaix in Chablis, works alongside her.
