The Winery

Raúl Pérez is one of Spain's most distinctive winemakers, rooted in the Bierzo region of León, where his family has long been connected to the land. After studying oenology and learning alongside the influential Álvaro Palacios, he launched his first personal project, Ultreia, in 2003. Since then, Pérez has worked across Spain and beyond, seeking out indigenous varieties and old vineyards, guided by a philosophy of minimal intervention that lets the soil, climate and vintage speak rather than the winemaker.
