The Winery

Saicho was founded by husband-and-wife Charlie and Natalie, who met while studying for PhDs in Food Science. Natalie's allergy to alcohol sparked the idea (inspired by her Hong Kong heritage, growing up drinking tea) to create a sophisticated non-alcoholic alternative to wine. Compared to hot-brewed tea, each hand-picked single-origin tea is cold-brewed for 24 hours, a process that draws out more complex, delicate flavours. These teas are finely balanced, with a touch of sweetness and acidity, and the effervescence lifts their natural aromatics, producing a sparkling beverage that pairs with food in a way few non-alcoholic drinks can match.
