The Winery

Saicho was founded by husband and wife Charlie and Natalie, who met while studying for PhDs in Food Science. Natalie's allergy to alcohol sparked the idea - inspired by her Hong Kong heritage, growing up drinking tea - to create a sophisticated non-alcoholic alternative to wine. Compared to hot-brewed tea, each hand-picked single-origin tea is cold-brewed for 24 hours, a process that draws out more complex, delicate flavours. These teas are finely balanced, with a touch of sweetness and acidity, and the effervescence lifts their natural aromatics, producing a sparkling beverage that pairs with food in a way few non-alcoholic drinks can match.
