Drew's Tasting Note

A luscious nose of dried fruits with a hint of vanilla. The Oloroso sherry casks yield a deep, generous palate of dark chocolate, caramel and a touch of warm spice. Velvety smooth, with a long, sweet finish.

Producer: Wolfburn Distillery | From: Scotland | Alcohol: 46.0 | Bottle: 70cl | Style: Single Malt

The Distillery

Wolfburn sits in Thurso, at the northern tip of the Scottish mainland. It takes its name from the Wolf Burn, the stream that fed the original distillery throughout the 19th century, before production ended in the 1860s. The site lay abandoned for over a century until a small team came looking in 2011 and found little left standing, though the burn still ran as it always had. A new distillery was built downstream, and the first spirit came off the stills on Burns Night, 25 January 2013. Every stage, from milling to bottling, is done here by hand by a small team, many of them Caithness born and bred, using soft local water, long fermentation and copper pot stills, before the spirit matures in cool warehouses close to the sea.

Wolfburn's first age-statement whisky, the 10 Year Old, matures for a full decade in hand-selected second-fill Oloroso sherry butts, non-chill-filtered and bottled at natural colour.
