Rich aromas of caramel and fudge, softened by a gentle hint of vanilla. Bottled at full cask strength, the Oloroso sherry butts and ex-bourbon quarter casks impart a bold, intense palate of dark chocolate, toffee, and a layer of peat smoke. A delightfully lingering, sweet and slightly smoky finish.

The Distillery

Wolfburn sits in Thurso, at the northern tip of the Scottish mainland. It takes its name from the Wolf Burn, the stream that fed the original distillery throughout the 19th century, before production ended in the 1860s. The site lay abandoned for over a century until a small team came looking in 2011 and found little left standing, though the burn still ran as it always had. A new distillery was built downstream, and the first spirit came off the stills on Burns Night, 25 January 2013. Every stage, from milling to bottling, is done here by hand by a small team, many of them Caithness born and bred, using soft local water, long fermentation and copper pot stills, before the spirit matures in cool warehouses close to the sea.


A limited release of 1,840 bottles, the Cask Strength is drawn from Oloroso sherry butts and ex-bourbon quarter casks after just over seven years, then bottled undiluted at 58.2% ABV, non-chill filtered and at natural colour.
